Size should comfortably host most modern games (roughly 36-40 in square when opened, though you can suggest better proportions). A smooth playing surface, tidy edge bevel, and flush seams matter more to me than a showy finish, so feel free to recommend whether a clear coat, stain, or other treatment makes the most sense for the species you pick.
